Banana Chocolate Cheesecake Muffins
Banana Chocolate Cheesecake Muffins. It’s not the weekend without a little baking. And these banana and chocolate cheesecake muffins are perfect for breakfast dessert or even a snack. A cream cheese filling on the inside and gooey chocolate in every bite. These are so fun and soo good…happy Saturday guys !! Don’t forget your mimosa ;)))
And so the galentines day beach weekend celebrations continue. Tonight we have dinner reservations out, but I am still in the kitchen today because you can’t have galantines weekend without a galantines brunch. So we are having mimosas and these delicious little muffins.
Banana muffins are good. Banana chocolate chip muffins are really good. But banana chocolate chip cheesecake muffins? Better. These muffins are perfect when they’re warm right out of the oven. Because the chocolate chips are gooey and the centers are filled with a cream cheese mixture which gives it the cheesecake flavor.
These are the perfect fluffy bites to pair with a mimosa and some galantines celebrations. And later we are going to Amada which is a Spanish tapas restaurant. So stay tuned for our stories because the food and the cocktails are both about to be super good !!
Ingredients
For the Cheesecake Filling
8 ounces cream cheese; room temperature
1/4 cup sugar
1 egg
2 teaspoons vanilla extract
For the Muffins
3 ripe bananas; mashed
1/4 cup butter; melted
1/4 cup honey
2 eggs
2 teaspoons vanilla extract
1 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon cinnamon
1/2 teaspoon kosher salt
1 cup dark chocolate chips
Directions
Preheat the oven to 350 degrees. Grease a 12 slot muffins tin.
Make the cheesecake filling. In a medium bowl, beat the cream cheese, sugar, egg, and vanilla until smooth
In a large bowl, add the mashed banana, butter, honey, eggs, and vanilla. Stir to combine. Add the flour, baking powder, cinnamon, and salt and stir until combined. Fold in the chocolate chips.
Divided half the batter among the prepared muffin tin. Add a dollop of the cream cheese filling. Add the remaining batter to cover the cheesecake filling. Transfer to the oven and cook for about 25 - 28 minutes or until a toothpick inserted into the center comes out clean.
