Pesto Potato Burrata Pizza. Extra cheeey loaded with herby sliced potatoes, basil pesto, and mozzarella. Topped with arugula salad and fresh creamy burrata. And in a heart shape of course because we’re still cellying galentines day !! Cheers !!
Like I have been mentioning all week, this weekend is another galentines celebration at the beach. So in honor of galentines/valentines celebrations continuing, I had to do another heart shaped pizza. And this one is a savory one that is so so good. And it’s super cute and fun.
Crispy crust in the shape of a heart topped with mozzarella and a layer of spiced sesame potatoes, drizzled with basil pesto, and finished with creamy burrata and arugula. There are so many aspects of this pizza that are unique and delicious. And can you ever go wrong with potato on pizza? I think no.
Another galentines celebration that resulted in too much food. But it was all so delicious. We had sweet chili fried shrimp and fried pickles for appetizers. Then we had this delicious pizza and a spinach, avocado, and Brussels sprout khachapuri. Finally for dessert we had chocolate covered strawberries and heart shaped macaroons.
Lots of food, lots of cocktails. And we had so much fun. We also all wore valentines day pjs so it was a super cozy night by the fire, eating and drinking. Weekend indulging at its finest !!
Ingredients
1 pizza dough; homemade or store-bought
1 Yukon gold potato; thinly sliced
2 teaspoons dried oregano
1 tablespoon sesame seeds
1 teaspoon ground cumin
2 tablespoons olive oil
salt, pepper, and red pepper flakes
4 ounces shredded mozzarella
1/3 cup basil pesto; homemade or store-bought
8 ounces burrata
arugula, fresh basil leaves, and dill for topping
Directions
In a medium bowl, combine the potatoes, oregano, sesame seeds, cumin, olive oil, salt, pepper, and red pepper flakes. On a baking sheet lined with parchment paper, add the potato mixture. Transfer to a 400 degree oven and cook for about 10 - 12 minutes or until crispy.
Spread the dough out on an oiled pan using your fingertips. Using a fork, pierce holes throughout. Spread the mozzarella and potatoes evenly over top. Drizzle with pesto. Transfer to a 450 degree oven and cook for approximately 10 - 12 minutes or until crust is crispy and cheese is melted.
Serve topped with burrata, arugula, basil leaves, and dill.
