Classic Carbonara

Classic Carbonara. I seriously don’t think we’ve ever shared our plain old classic carbonara which is kinda crazy to me because this a staple dish in our house. But theres nothing like a creamy delicious carbonara with crispy thick-cut bacon and topped with Parmesan and an egg. Simple but so delicious and perfect for curing the Sunday scaries !!

Can you believe that my favorite pasta dish and honestly probably just favorite dish in general growing up is one that we have never shared the recipe for? Creamy classic carbonara, was my all time favorite dinner growing up. I asked for it for my birthday basically every year. It still is one of my favorites, but I have evolved my taste buds a bit since being a kid, so it’s not my all time favorite but it’s still up there in the rankings.

We have shared plenty of carbonara recipes with you guys throughout the years, but never our classic plain and simple carbonara. With crispy bacon, parmesan cheese, and egg. The simple way that is always a winner. And it’s a staple Sunday pasta in our house. Because you know Sundays are for pasta to cure the scaries.

I am super sad to see the weekend go. Honestly, I'm kinda depressed because I had such a good one and I don’t want it to end. Even though a lot of people have off tomorrow, I will be working…so hence the scaries. Major scaries. But hope everyone has a good Sunday and a good week ahead !!


Ingredients

  • 2 tablespoons olive oil

  • 1/2 pound bacon or guanciale; chopped

  • 4 eggs

  • 2 egg yolks

  • 3/4 cup pecorino romano

  • fresh ground black pepper

  • 1 pound long-cut pasta

Directions

  1. In a large skillet, heat the olive oil. Add the bacon. Cook for about 5 - 7 minutes. Set aside and keep warm.

  2. In a medium bowl, ad the eggs, pecorino romano, and black pepper. Whisk until combined.

  3. Cook the pasta. Drain, saving 1 cup of cooking water. Add the pasta to the skillet with the bacon. Toss until coated with oil. Remove from heat and add the egg mixture and pasta water. Toss to combine or until creamy. Serve topped with additional cheese and black pepper.
