Roasted Herb Potatoes
National potato day calls for a potato recipe, and this one for sure hit the spot. We didn’t even know it was national potato day last Monday to be quite honest until I was watching the morning news and the announcement came on!
The second I knew it was national potato day, I called my mom and told her we had to come up with a potato recipe to share with our followers. Immediately, she thought of this simple yet delicious roasted potato side dish to pair with our soup for the night.
We vote to extend national potato day into national potato month, what do you guys think?!
Ingredients:
1 ½ pounds of small potatoes
¼ cup of olive oil
Salt and pepper to taste
Fresh thyme
Fresh oregano
Directions:
In a large bowl mix the potatoes with the olive oil; spread them on a large baking sheet covered with parchment paper; sprinkle them with salt, pepper, and herbs
Place the potatoes in a 400 degree oven for approximately 30 - 40 minutes until crispy
