Oven Roasted Herb & Gorgonzola Potatoes
So it was recently national potato day, but we are all for extending this day into an entire month especially since Labor Day Weekend calls for BBQs with amazing potato recipes.
We are so excited about this recipe, it is so easy and potentially on its way to becoming one of our new favorite go-to potato recipes. The mix of herbs with gorgonzola create the most unique and amazing flavor on the potatoes. If you are looking for recipes for a Labor Day BBQ or party then look no further because this one is a must try! You can also do these potatoes on the grill, but we prefer to oven roast them since it makes them crispier!
What fun BBQ recipes do you guys have in mind for Labor Day Weekend?
Ingredients:
1 ½ pounds of baby Yukon gold potatoes; halved
2 tbsp of olive oil
½ tsp of salt
½ tsp of black pepper
½ cup of crumbled gorgonzola
⅓ cup of mixed fresh herbs (chives, dill, parsley, basil, oregano)
Directions:
Pre-heat the oven to 400 degrees
Mix the potatoes with the olive oil, salt, and pepper; lay them on baking sheet covered in parchment paper cut side down; cook until browned for approximately 20 - 30 minutes; flip them over and sprinkle them with herbs and gorgonzola then cook for another 5 - 8 minutes
