Sweet & Spicy Orange Salmon
It is Copper River Salmon season and it sadly doesn’t last long! So, every time we see this salmon in the grocery store we make sure to buy it. The season for Copper River Salmon is coming to an end, but if your local grocery store is lucky enough to still have it, we highly recommend buying it!
Copper River Salmon has such an orange color, and it is truly one of the best kinds of salmon I have ever tried. This recipe is so yummy with the Copper River Salmon, and the mix of sweet and spicy makes it fun! It has a little bit of an Asian flare to it. Pairing it with the sour cream and Sriracha sauce mixture makes this salmon a perfect seafood dish!
a. Ingredients:
1 ½ - 2 pounds of salmon
Juice and zest from 1 orange
¼ cup of soy sauce
¼ cup of honey
1 tsp of sesame oil
3 tbsp of sriracha + 1 tbsp
1 cup of sour cream
b. Directions:
Whisk orange juice, zest, soy sauce, honey, and sesame oil in a glass baking dish
Place salmon in the marinade skin side up; let marinate for at least 2 hours
Pre-heat the oven to 275 degrees; place salmon on a baking sheet covered with parchment paper and spoon some extra sauce on top
Bake for approximately 40 minutes or until the salmon is cooked through
While salmon is cooking, mix the sour cream and extra tbsp of sriracha sauce together; this will be the dipping sauce for the salmon
Spoon more sauce over the salmon and place it under the broiler for 1 – 3 minutes
