Oven Baked Crispy Cod
This dish has become one of our new summer staples! If I’m being honest we might be over doing it with this one a little, but it is just too good!
This recipe is very simple and easy to follow. You simply cut the cod into serving pieces and dip them in milk then sprinkle them with salt and pepper. Next you dredge the filets in breadcrumbs and place them on a cookie sheet lined with parchment paper. Drizzle them with melted butter and lemon juice then bake them in the oven, and there you have it! One of our favorite seafood dishes at the moment, and it is just too easy to prepare!
Summer fish is always so delicious. Every grocery store we have been going to around us whether it is at home or at the beach always has the freshest looking fish these days. Ingredients:
1 ½ - 2 pounds of cod; cut into serving pieces
1 cup of milk
1 ½ cups of breadcrumbs
2 - 3 tbsp of clarified or melted butter
Juice of 1 lemon
Salt and pepper
Directions:
Dip the cod filets in milk, sprinkle them with salt and pepper, and dredge them in the breadcrumbs
Place them on a cookie sheet lined with parchment paper; drizzle each filet with the melted butter and lemon juice
Bake in a 400 degree oven for approximately 12 - 15 minutes or until the fish is cooked through
