Salmon Poke with Mango Avocado Salsa. Summer Saturday’s at the beach always need a little seafood for dinner. Salmon marinated in a sesame, soy, and orange mixture paired with a sweet and spicy mango avocado salsa. Topped with sesame seeds and scallions and served alongside a spicy sriracha Mayo. So summery, so fun, and so delicious !! And don’t forget to pair with a marg…it’s a Saturday essential ;)) cheers !!

Ok guys, so I am super excited about this recipe today. I know, I know another salmon recipe…but hear me out. So we have never done a salmon poke before, and I am a HUGE fan of raw seafood. If you know me, you know I love my ahi tunas, raw salmon, yellowtail…just all the above. I am always down to try a good raw fish.

So, I have been waiting for the perfect piece of salmon to make a poke with. Because I feel like if you’re going to have salmon raw it has to be good salmon. And today our farmers market at the shore FINALLY had salmon. The farmers market always has the freshest and best fish I have ever had. I was so excited I knew we had to get it and make poke. With my all time summer favorite mango salsa of course.

So the salmon is marinated in a soy sauce, sesame oil, and citrus mixture. Then it’s plated on top of all that sweet and savory mango salsa that I am absolutely obsessed with. AND the sriracha mayo gives it that spicy salmon flavor…it’s absolutely delicious.

My close friend came back down the shore again today to stay for the weekend. We had another super fun and super beautiful day at the beach. In the morning we prepared all the dinner foods. Then we went to the beach and got drinks at the local beach bar. Rum punches and mojitos. Then we came back to the house and had margs, sangria, grilled shrimp, grilled, clams, AND this incredible dinner with my parents. And of course a little out and about action at the shore bars.

We were absolutely obsessed with this recipe and you can totally count on seeing this again because I will definitely be making it again. Maybe next time I’ll give it a different twist ;)) !! Cheers to summer Saturdays !!


Ingredients

  • 1 pound sushi grade salmon; diced

  • 1/2 cup soy sauce

  • 1 orange juiced

  • 1 lemon juiced

  • 1 tablespoon mirin

  • 2 teaspoons sesame oil

  • sesame seeds

  • scallions for topping

For the Mango Avocado Salsa

  • 2 mangos; diced

  • 2 avocados; diced

  • 2 jalapeños; seeded and diced

  • juice of 1 lime

  • 2 tablespoons orange juice

  • salt and pepper

For the Sriracha Mayo

  • 1/3 cup mayonnaise

  • 2 tablespoons sriracha sauce

  • 1 lemon; juiced

  • 2 teaspoons sesame oil

Directions

  1. Mix the salmon, soy sauce, orange juice, lemon juice, mirin, sesame oil, and sesame seeds in a medium bowl. Refrigerate for 1 hour.

  2. To make the salsa. In a medium bowl, add the mango, avocado, jalapeño, lime juice, and orange juice. Season with salt and pepper. Toss to combine.

  3. To make the Sriracha Mayo. Combine all ingredients in a small bowl.

  4. Assemble the poke. Spoon the salmon mixture over the mango salsa. Serve topped with scallions and alongside Sriracha Mayo.
