Sweet Onion Applewood BBQ Grilled Salmon

Sweet Onion Applewood BBQ Grilled Salmon. Sockeye salmon marinated in William Sonoma Sweet Onion Applewood Barbecue Sauce and topped with grilled corn, avocado, and tomato salsa. Garnished with fresh scallions and basil. Served alongside a Sweet Onion Applewood BBQ Crema. The perfect summer beachy salmon. And of course you can’t forget that beachy cocktail…we’re enjoying some tropical rum and orange juice with this sweet and savory salmon !! Cheers and happy Friday !!

Another beautiful day at the beach calls for another beautiful salmon recipe. And it’s sockeye salmon season which is all the more reason to make a summer Friday salmon. This is one of our favorite salmon toppings. It’s the classic corn, avocado, tomato salsa. But the key here is the new sauce we tried from William Sonoma. It’s a Sweet Onion Applewood Barbecue Sauce and it creates the perfect blend of sweet and savory flavors for salmon. And paired with this salsa…so SO good you guys.

Like I mentioned, today was a perfect day at the beach. It was one of those days with unbeatable weather. Clear blue skies and the right breeze. Not too hot, not too cold. So we definitely enjoyed our beach day today which made me even more excited to have this beachy seafood dinner.

And we’ve still got a whole beautiful weekend ahead, so cheers !! Now back to my rum and orange juice to pair with this fun summer dish !

For the Barbecue Crema

Directions

  1. Rub the salmon with the Sweet Onion Applewood Barbecue Sauce. Marinate for 30 minutes. Transfer to a 275 degree oven and bake for 20 minutes or until salmon is cooked through.

  2. Heat the grill on medium heat. Grill the corn for 6 - 8 minutes turning frequently. Slice kernels off the cob.

  3. To make the corn salsa. In a medium bowl mix the olive oil, grilled corn, tomatoes, avocado, basil, and scallions. Toss to combine. Season with salt and pepper.

  4. Make the Barbecue Crema. In a small bowl, combine the sour cream and Sweet Onion Applewood Barbecue Sauce.

  5. Serve salmon topped with corn salsa, additional fresh basil leaves, and alongside Barbecue Crema.
