New England Lobster Rolls
Summer is the perfect excuse to make a delicious lobster roll dish either for lunch or dinner! Everyone at the jersey shore is always looking to find the best lobster rolls in town, but nothing beats a good homemade version. They are very simple to make, and truly are a beach weekend crowd pleaser!
We served these lobster rolls on a Saturday night at the beach. It was our first time trying a lobster roll recipe, and we were very pleased with the outcome. We used to get lobster rolls from a small seafood restaurant that me and my brother worked at during the summers at the shore when we were younger. However, those most definitely did not compare to our homemade ones! It is safe to say will be continuing to make our own because they were too delicious!
a. Ingredients:
Three 1 ½ pound whole lobsters; steamed
¼ cup of mayonnaise
2 stalks of celery; finely chopped
Lemon juice
Salt and freshly ground pepper
Lettuce leaves for the buns
4 brioche hot dog buns
¼ cup of clarified butter
Fresh chives; chopped
b. Directions:
In a small bowl mix the mayonnaise, juice of half a lemon, and salt and pepper; set aside
Remove the meat from the lobsters and cut into chunks; mix the lobster chunks with the mayonnaise mixture and toss gently
Taste seasoning and add lemon, salt, and pepper if needed
Place a lettuce leaf onto each bun and mound with the lobster salad; top with chives and drizzle with the clarified butter then serve
