Fish & Chips
Believe it or not this idea came from a restaurant that me and my brother, Mike, worked at during summers at the beach! The restaurant was a small seafood restaurant which had a dine-in service, take out service, and retail service. My Mom always bought her fish there because it was so fresh and seafood at the beach is always the best! After becoming such frequent customers in the summer months, the owner was eager to hire me and my brother when we applied for jobs there.
While their menu was huge, one of our favorite dishes from the restaurant was the fish and chips! We loved it so much because they used halibut for the fried fish which we had never thought to do. We decided we would give fish and chips a try on our own using halibut, and we found that the halibut was the perfect fish to fry because it was thick and did not fall apart when frying! It has since become a staple meal in our house especially in the summer months when we can get super fresh fish at the beach!
We highly recommend trying your fish and chips recipe with halibut, it is not only a delicious fish, but it is such an easy one to fry! We love to pair ours with coleslaw for the perfect touch! Let us know what your thoughts on this idea are!
a. Ingredients for the Fish:
1 ½ lb of skinned halibut; cut into chunks
2 large eggs; beaten in a shallow bowl
8 oz cannister of Panko breadcrumbs
1 cup of canola oil for frying
b. Ingredients for the Chips:
3 large potatoes; cut into French fry strips
¼ cup of olive oil
c. Directions:
Pre-heat oven to 400 degrees; mix potatoes in a large bowl with olive oil salt
Place potatoes on a cookie sheet covered with parchment paper; place in oven and cook for approximately 30 minutes until brown on bottom; once potatoes are brown on one side flip them over and cook for an additional 15 minutes until brown on other side
For the fish: dip chunks in egg then in Panko breadcrumbs
Heat skillet or deep fryer until oil is very hot; place the breaded fish chunks in skillet; brown on one side then the other and drain on paper towels
Serve with your favorite coleslaw, ketchup, and the fries!
