Chili Lime Shrimp Tacos
We love a good Mexican night in the summer or to celebrate Cinco de Mayo! While we actually did our Cinco de Mayo meal on Cinco de Cuatro, the food still tasted just as good! These shrimp tacos were definitely the highlight of our meal! They are so simple yet so delicious especially if you like seafood in your tacos which we most definitely do!
The rest of our meal was great as well! For appetizers we made two different dips, one was a seven layer taco dip and the other was Mexican street corn nachos! We ate so much of the dips and chips we were so full before dinner, but we made room to taste our delicious tacos! We made beef tacos as well and a chile rellenos casserole! Everything turned out really good as we had hoped! Lastly, this night was made extra fun with our homemade margaritas which by the way are pretty strong! We hope to post the recipe for them sometime this summer so you guys can try them! We threw in some coronas too to keep our Mexican theme going!
*Makes approximately six tacos
a. Ingredients:
6 small flour tortillas
1 pound of medium shrimp; peeled and deveined
3 tbsp of olive oil
¼ tsp of chili powder
¼ tsp of ground cumin
1/8 tsp of black pepper
½ cup of sour cream
Shredded iceberg lettuce leaves
Handful of cilantro leaves
1 lime; juiced
b. Directions:
In a bowl mix the shrimp, olive oil, chili powder, cumin, and black pepper until well coated; set aside for an hour
Meanwhile char the tortillas on stove top of grill; set aside
In a separate bowl, add lime juice, sour cream, salt, and pepper
Sauté the shrimp in a large skillet turning once
Lay the tortillas out; top with lettuce, 3 to 4 shrimp, and drizzle with the lime crema sauce; sprinkle with chopped cilantro
