Sage Butternut Squash Blue Cheese & Prosciutto Grilled Pizza

If the flavors of fall all came together in one, I think this pizza would be it. It’s herby, it’s cheesy, and it’s fall flavored all over. Roast the butternut squash with the sage. Top the pizza with the cheeses, mozzarella because all good pizzas need mozzarella. Blue cheese to add the fall twist and because its delicious. The prosciutto is always a good pizza topping for fall. And there you have it, a pizza with the word fall written ALL over it.
Even if it was summer, this pizza is GOOD. I don’t care when you make it, it is just delicious. So definitely give this one a try!
Ingredients:
1 pizza dough (homemade or store-bought)
1 butternut squash; cubed
sage leaves, salt, and pepper
2 tablespoons of olive oil
1/4 pound of prosciutto
4 ounces of stilton blue cheese
4 ounces of shredded mozzarella
Directions:
On a parchment line baking sheet lay the butternut squash. Drizzle with olive oil, top with salt, pepper, and sage. Roast in a 425 degree oven for 15 - 20minutes.
Meanwhile roll out the pizza dough; transfer the dough to the grilling pan spraying the pan first with olive oil
Place grill pan on medium-high grill, close the grill and flip the dough after brown (this should take about 5 minutes but keep an eye on it so it doesn’t burn)
Flip over and assemble the toppings: first lay down the cheeses then top with the butternut squash and prosciutto. Cook until crust is crispy and cheese is melted.
