Cheesy Fig & Prosciutto Grilled Pizza

Cheesy Fig Prosciutto Grilled Pizza! It’s fall and it’s Friday so you know what that means! Grilled pizza is our Friday go to and what better way to kick off November than a fall inspired one! Loaded with 3 cheeses, mozzarella, Brie, and Gorgonzola then topped with fresh figs and San Daniele prosciutto, this is perfection! Oh and the caramelized onions, those are super necessary on a fall pizza!

Pizza Friday is a tradition that never fails. Pizza is easy, its simple, and its fun because the toppings are endless. Fall pizzas are definitely our favorite! Fall fruits are the perfect topping for a pizza, and if you can find fresh figs, it is definitely a pizza topping you need to try.

The weather has been on our side this fall for grilling. So, grilling these pizzas is a must. We think grilling pizza is SO much better than cooking it in the oven. One, because it makes the crust SUPER crispy. Two, the cheese oozes perfectly across the pizza. Three, it gives the pizza a charred flavor. And four, it is SO easy. Now all we need is a fall cocktail, any suggestions?!


Ingredients:

  • Pizza Dough (homemade or store-bought)

  • 1 sweet onion (thinly sliced)

  • 2 tbsp of unsalted butter

  • 1/4 cup of sherry

  • salt and pepper

  • 1/4 lb of brie

  • 2 tbsp of crumbled stilton

  • 4 oz of shredded mozzarella

  • 4-5 slices of San Daniele prosciutto

  • 6 fresh figs

Directions:

  1. In a large skillet, melt the butter over low heat, add the onions, salt, and pepper; sauté until they are brown and caramelized (this should take 30 to 40 minutes); as the onions begin to dry up add the sherry and water as needed

  2. Meanwhile roll out the pizza dough; transfer the dough to the grilling pan spraying the pan first with olive oil

  3. Place grill pan on medium-high grill, close the grill and flip the dough after brown (this should take about 5 minutes but keep an eye on it so it doesn’t burn)

  4. Flip over and assemble the toppings: first lay down the caramelized onions, sprinkle the mozzarella, layer the figs, top with brie, stilton, and prosciutto
