Cheesy Pear & Honey Walnut Grilled Pizza! Loaded with 3 cheeses, mozzarella, Brie, and Stilton Blue, fresh Anjou Pears, Caramelized Onions, and topped with toasted Honey Walnuts and Thyme! So many flavors on this delicious fall pizza that pizza Friday has never looked so good!
As you guys have come to know, Friday is our big pizza night. Why do we love pizza on Friday? Well it’s simple, it’s fun, and it’s social. Whether it is a quiet night with our family or we have some guests popping in for a drink and some fun bites, you can never go wrong with pizza. There is so much you can do with it, the toppings are endless. So no matter who is coming over, you can always please everyone!
Ever since the summer, we have been grilling our pizzas. We have found the char grilled flavor is so much more fun than just cooking pizza in the oven. The dough gets SO crispy and the cheese just oozes all over the pizza which is why we love to put a variety of delicious cheeses!
We have been so inspired to make as many fall pizzas as possible. There are SO many festive toppings for a fall pizza, and pears, caramelized onions, and roasted nuts as ingredients make a perfect combo! We paired this perfectly grilled pizza with Pomegrante Martinis because we are so ready for the holiday season! Ingredients:
Pizza Dough (homemade or store-bought)
1 sweet onion (thinly sliced)
2 tbsp of unsalted butter
1/4 cup of sherry
salt and pepper
1/3 cup of walnuts
1 tbsp of honey
1/4 lb of brie
2 tbsp of crumbled stilton
4 oz of shredded mozzarella
1/2 a pear (thinly sliced)
thyme for garnish
Directions:
In a large skillet, melt the butter over low heat, add the onions, salt, and pepper; sauté until they are brown and caramelized (this should take 30 to 40 minutes); as the onions begin to dry up add the sherry and water as needed
On a parchment line baking sheet lay the walnuts, drizzle them with honey, and toast them in a 400 degree oven
Meanwhile roll out the pizza dough; transfer the dough to the grilling pan spraying the pan first with olive oil
Place grill pan on medium-high grill, close the grill and flip the dough after brown (this should take about 5 minutes but keep an eye on it so it doesn’t burn)
Flip over and assemble the toppings: first lay down the caramelized onions, sprinkle the mozzarella, layer the pears, top with brie, stilton, and honey walnuts; garnish with fresh thyme
