Asparagus Truffle Pizza
Pizza Friday has been a long standing tradition in our house for as long as I can remember! My friends in high school always begged to come over for Pizza Friday to have some of my moms homemade pizza!
Having this tradition for so long means we are always trying to think of new and creative pizza recipes to try. There is so much you can do with pizza to make it both fun and delicious! This Asparagus Truffle Pizza is a new one we tried in the spring, and we have continued to make it since. There is quite a bit going on with this pizza recipe, but all the ingredients just mesh so well together! The toasted walnuts, fried egg, asparagus, cheeses, and truffle oil really bring out a totally unique flavor!

Ingredients:
1 large pizza dough (homemade or store bought)
⅓ pound of thinly sliced mozzarella
½ cup of shaved parmesan
½ pound of cooked asparagus spears
⅓ cup of walnuts
¼ cup of truffle oil
1 egg
Directions:
Spread the pizza on an oiled pizza pan
Cover entire pizza with the thinly sliced mozzarella; bake in a 475 degree oven on the bottom shelf until the cheese starts to bubble and brown
Remove pizza from oven; arrange the asparagus spears on the pizza and sprinkle with the grated parmesan and walnuts
Crack an egg over the middle of the pizza trying to break the egg and spread it across the pizza as much as possible; sprinkle with black pepper and place the pizza back in the oven until the egg has set and the crust has become crispy
Remove from the oven and drizzle the pizza with truffle oil
