Pasta with Burrata & Pesto

This dish is super simple and great for summer with the pesto! The burrata mixes so well with the homemade pesto for the perfect combination of flavors!

We served this dish on Sunday of Memorial Day Weekend when we were at the beach and it was a perfect dish to end the weekend before our Monday barbecue! We love serving this dish for company because everyone loves it, and it is super easy to make!

A little tip when you are making the pesto is to dip some fresh bread it! Homemade pesto is always so delicious on top of bread that we can never resist! Once you are done making your pesto all that is left to do for this dish is cook the pasta then add the pesto and burrata and stir!


a.     Ingredients:

  • 2 cups of fresh basil leaves

  • 2 cloves of garlic

  • ¼ cup of walnuts or pine nuts

  • ½ cup of extra virgin olive oil

  • ½ cup of fresh grated Parmesan-Reggiano

  • Salt and fresh ground black pepper to taste

  • 1 pound of rigatoni, penne, or any other type of short pasta

  • 8 oz of burrata


b.     Directions:

  1. For the pesto: add basil, pine nuts/walnuts, and garlic to the bowl of a food processor and pulse several times; add the cheese and pulse several times more; scrap down the sides of the food processor with a rubber spatula; while the food processor is running, slowly add the olive oil; continue to scrap down the sides of the food processor until everything is incorporated and the mixture is smooth; place in a bowl then add salt and pepper to taste

  2. Cook the pasta according to package directions; drain the pasta saving 1 cup of the pasta water

  3. Return the pasta back to cooking pot and add the pesto along with the cooking water a little at a time if it seems to dry

  4. Place in a serving bowl and top with the burrata; cut the burrata up mixing it around the pasta
