Pasta with Ricotta
This recipe is so simple and dates all the way back to my great grandmother who immigrated from Italy. My mom has been making this dish for as long as I can remember which she got from my MomMom who got it from my Italian great grandmother.
This dish is amazingly simple, yet it is so delicious and a staple Sunday night Italian dinner recipe! To create this dish you simply mix together the ricotta, milk, parmesan cheese, and salt and pepper. Then cook the pasta, drain it, and place it back into the original pot. Add the butter and cook until it has melted. Next, add the ricotta mixture and stir together until everything is well combined. Serve along side with your favorite marinara, and there you have it!
a. Ingredients:
1 pound of short pasta
One 15 oz container of whole milk ricotta cheese
½ cup of milk
¼ cup of butter
½ cup of grated parmesan cheese
Salt and pepper to taste
Side of marinara of choice
b. Directions:
Cook the pasta according to package directions
Meanwhile place the ricotta, milk, cheese, and salt and pepper in a bowl then stir to combine; set aside
When the pasta is cooked drain and place it back in the original pot; add the butter and cook until butter is melted; add ricotta mixture and stir to incorporate
Serve with favorite marinara sauce
