For one thing, I think Valentine’s Day is all about dessert. And I think doughnuts are the way to go when it comes to this holiday. I mean everyone loves doughnuts…it’s kind of hard not to. And they are the perfect little dessert to do up in a heart shape.
Honestly I think a lot of us would take a dozen of these doughnuts over a dozen roses any day, am I right?!
Ingredients
2 1/4 cup cake flour
1/2 teaspoon salt
1 1/2 teaspoon baking powder
1/2 cup sugar
2 tablespoons butter
2 egg yolks
1/3 cup buttermilk
oil for frying
For the Glaze
3 1/2 cups powdered sugar
1 1/2 teaspoons corn syrup
1/2 teaspoon vanilla extract
pinch of salt
1/3 cup warm water
Directions
In a medium bowl, sift the flour, salt, and baking powder. Set aside.
Cream the butter and sugar with an electric hand mixer until sandy. Add the egg yolks and mix until fluffy. Alternate adding the dry ingredients and the buttermilk, ending with the dry ingredients. Wrap the dough in plastic and refrigerate for 1 hour.
Roll out the dough on a floured surface about 3/4 inch thick. Using a heart shaped cookie cutter, cut out the doughnuts, gathering and re-rolling the dough as needed.
Heat the oil in a frying pan. When the oil is very hot, drop a few doughnuts in at a time. Fry about 30 seconds per side or until golden. Remove using a slotted spoon and drain on paper towels.
Meanwhile make the glaze. Whisk all ingredients in a medium bowl until smooth. Once the doughnuts have cooled, drizzle the glaze over top and allow it to set before serving.
