Spicy Chicken Fajitas
Taco Tuesday Spicy Chicken Fajitas loaded with fresh Bell Peppers, Red Onion, Purple Cabbage, Jalapeños, Scallions, and loads of Chipotle Chili Powder! Paired with Spicy Guacamole and a Spicy Lime Crema, because why not go for extra spice?! Oh and can’t forget the beer!! Cheers to Taco Tuez!!
Ok guys, does taco Tuesday get any better than this?! Look at these vibrant fajitas that are seriously loaded! We’ve got the tricolored bell peppers, the red onions, the jalapeños, the scallions, and of course the spicy chicken! We marinated the chicken in chipotle chili powder, paprika, and cumin. Gave it a little extra spice by topping it with jalapeños, spicy guacamole, and spicy lime Crema because honestly taco Tuesday is all about bringing the heat!
Ingredients:
For the Chicken Fajitas
1 pound boneless chicken breasts; cut into strips
3 tricolored bell peppers; sliced
1 red onion; sliced
2 jalapeños; sliced
1/3 cup olive oil + 3 tablespoons
salt and pepper
2 teaspoon chipotle chili powder
2 teaspoon cumin
1/2 teaspoon smoked paprika
1 head purple cabbage; shredded
warm corn or flour tortillas
For the Spicy Guacamole
2 ripe avocados
1-2 roma tomatoes; chopped
1 jalapeño; sliced
juice of 1 lime
1/4 teaspoon tabasco
salt and pepper
1-2 scallions; chopped
For the Lime Crema
juice of 1 lime
1 cup sour cream
salt and pepper
Directions
For the Toppings
In a large bowl, mix the chicken, the peppers, red onion, and jalapeños. Drizzle with the olive oil and seasonings. Toss to combine.
Roast in 425 degree oven for 20 - 25 minutes until chicken is cooked and peppers and onions start to caramelize.
In a medium bowl, toss the purple cabbage with 3 tablespoons of olive oil, salt, and pepper. Roast in 425 degree oven for 5 - 8 minutes or until it starts to brown.
Warm the tortillas, top with the purple cabbage, chicken, and vegetables, and serve alongside spicy guacamole and lime crema.
