Chipotle Lime Shrimp Fajitas
Chipotle Lime Shrimp Fajitas. We’re here for the heat this taco Tuesday. These fajitas are spicy, tangy, and SO delicious. These are loaded with chipotle chili shrimp, bell peppers, red onions, jalapeños, and scallions. Serve alongside some Spicy Guacamole and a Lime Crema. It’s a bit heavy on the spicy, but a fajita isn’t complete without the heat. Don’t forget a cold draft beer it’s equally as important ;) !!
Its hard not to like Taco Tuesday. There are SO many variations to tacos, the possibilities are endless. Enter the Chipotle Lime Shrimp Fajita. This recipe definitely brings the spice, but the Lime Crema brings the perfect cool down to the table.
The shrimp, bell peppers, red onion, and jalapeños are coated in a delicious combo of chipotle chili powder, cumin, and paprika. Toss them with some olive oil, salt, and pepper then roast them on a sheet pan in the oven. Oh, did I mention how easy this meal is?! Sheet pan meals are always a weekday winner.
Make the spicy guac, it definitely adds to the meal. Fill it with plenty of Tabasco and chopped jalapeños. We like to add some lime juice to make it tangy and stir in some chopped Roma tomatoes and scallions. It's a simple guac recipe but its so good.
The Lime Crema is even simpler but equally as important. Juice of a lime and sour cream. Throw in a little salt and pepper. This is necessary to have on the side. With all the spicy this sauce offsets it, but in a good way.

Ingredients:
For the Toppings
3 - 4 tricolored bell peppers; sliced
1 red onion; sliced
2 jalapeños; sliced
1/4 cup olive oil
salt and pepper
1 teaspoon chipotle chili powder
1 teaspoon cumin
1/4 teaspoon smoked paprika
For the Shrimp Fajitas
1 pound shrimp; peeled and deveined
3 tablespoons olive oil
salt and pepper
1 teaspoon chipotle chili powder
1 teaspoon cumin
1/4 teaspoon smoked paprika
warm corn or flour tortillas
For the Spicy Guacamole
2 ripe avocados
1-2 roma tomatoes; chopped
1 jalapeño; sliced
juice of 1 lime
1/4 teaspoon tabasco
salt and pepper
1-2 scallions; chopped
For the Lime Crema
juice of 1 lime
1 cup sour cream
salt and pepper
Directions
For the Toppings
In a large bowl, mix the peppers, red onion, jalapeños. Drizzle them with the olive oil and seasonings. Toss to combine.
Transfer to a baking sheet lined with parchment paper. Roasted in a preheated 425 degree oven for 10 - 15 minutes until peppers start to brown and onions start to caramelize.
For the Shrimp Fajitas
Meanwhile, place the shrimp in a medium sized bowl, drizzle with olive oil and seasonings. Toss to combine. Set aside
After, the vegetables have been roasting for 15 minutes, pushed them to one side and add the shrimp to the baking sheet. Roasted along with the vegetables for another 10 - 15 minutes until shrimp is cooked. Remove from oven.
Warm the tortillas, top with vegetables, and serve alongside spicy guacamole and lime crema.
