Strawberry Almond Cake. Because Mondays really just need cake sometimes, you know? This one is super simple and totally perfect for summer. The best part? It’s super easy to make so if you’re trying to squeeze in some baking and a summer beach day…this is the dessert you need in your life. And gotta love a good strawberry dessert for summer !!

Monday’s are rough…cake ALWAYS makes things better. Especially on a Monday. Today was actually a pretty good day for me though. I had off work today because I had a lot of appointments and needed to get some things done, so I took the day. This morning was super relaxing…coffee in bed with Netflix and of course little Ellie because she loves to join me for morning coffee. Then I got in a workout…it was so nice not working out at 5:30 AM like usual. Sometimes you just need a day to yourself, you know?!

But now it’s back to work tomorrow. So I mean to cure the Monday scaries, we have cake. Strawberry Almond Cake to be exact. I love a good almond cake. Almond cakes always remind me of Italian desserts. The center is gooey and moist loaded with lots of fresh strawberries and topped with plenty of sliced almonds. It’s the kind of cake you want to eat for breakfast AND dessert. Who doesn’t love a cake that’s perfect for all hours of the day?

Ingredients

  • 1/2 cup butter; room temperature

  • 3 tablespoons vegetable oil

  • 2 eggs

  • 1 cup sugar

  • 1 teaspoon orange zest

  • 1 teaspoon almond extract

  • 1 teaspoon vanilla extract

  • 1 1/2 cups flour

  • 1/2 cup almond flour

  • 1 teaspoon baking powder

  • 3/4 teaspoon salt

  • 1 1/2 cups sliced strawberries

  • 1/2 cup slivered almonds

Directions

  1. Preheat the oven to 350 degrees. Grease an 8 inch springform pan and set aside.

  2. Using an electric hand mixer, cream the butter, oil, eggs, and sugar until light and fluffy for about 2 minutes. Add the orange zest, almond extract, and vanilla extract. Beat to combine.

  3. Add the flour, almond flour, baking powder, and salt. Beat on low speed until just mixed. Fold in strawberry slices.

  4. Pour the batter into the prepared springform pan. Top with slivered almonds. Bake for 40 minutes or until cake is lightly brown. Allow cake to cool before slicing and serving.
