Gouda Grits with Cajun Butter Shrimp & Grilled Corn. The ultimate southern style comfort food for summer nights. Saucy, spicy, buttery shrimp over cheesy Gouda grits. Sprinkled with lots of sweet grilled corn and garnished with fresh chives and basil leaves. The key is all that buttery sauce to drizzle over top. SO good & SO addicting. Cheers to some southern comfort on a summer Tuesday !!

We are having a TOTAL southern summer dinner. We we’ve got this cajun butter shrimp and grits with the grilled corn. AND we have fried green tomatoes. Does it get any more southern summer comfort style than that?! I don’t think so, and I am so here for it.

This is our first shrimp and grits recipe of the summer. We made a similar one last summer…actually pretty much identical, but we liked it so much we had to bring it back this summer. I love a good grits recipe for dinner because I am totally the kind of girl who could eat breakfast for dinner any day of the week. And I definitely associate grits with the breakfast category of food. But if you do it up with all the right ingredients, the dish become so much more than just simple, boring grits.

This recipe is super cheesy…gouda and grits?! You can count us in. Topped with butter, spicy cajun shrimp. That butter sauce is where it is at. Make sure you save a little extra sauce to drizzle over your grits because the buttery sauce is what makes this dish next level. Then you’ve got all those delicious summer toppings….sweet grilled corn, fresh chives, and fresh basil leaves. The toppings give it that fresh and summery vibe. And if you’re into fried green tomatoes too, definitely serve those up on the side. Trust me…fried green tomatoes and grits is also a heavenly combo. We have made it for breakfast before and OH it is delicious !!

Cheers to yet another day closer to the weekend. I am super excited for all the plans I have in store. I can’t believe there are only 4 weekends left of summer including Labor Day :’(( so you best believe I am making sure I have super fun plans with both friends and family every weekend going forward !! With lots of good summer food and cocktails…I currently have a growing list of summer recipes I still want to make on my phone ;)) !! Happy Tuesday !!


Ingredients

  • 1 pound jumbo shrimp, peeled and deveined 

  • salt and pepper 

  • 1/2 teaspoon smoked paprika 

  • 1/2 teaspoon cumin 

  • 1/2 teaspoon chipotle chili powder 

  • 4 tablespoons butter 

  • 4 cups chicken broth

  • 1/3 cup milk

  • 1 cup grits

  • 1/4 pound Gouda cheese; chopped

  • 2 ears corn; grilled and kernels removed

  • chopped chives 

  • fresh basil leaves

Directions

  1. Sprinkle the shrimp on both sides with salt, pepper, smoked paprika, cumin, and chipotle chili powder. In a large skillet over medium-high heat, add the butter. When the butter sizzles, add the shrimp. Cook for about 3 - 4 minutes per side or until cooked through.

  2. In another large skillet, add the chicken broth and milk. Bring to a boil and add grits. Cook until the grits have thickened, stirring often. Add the Gouda and season with salt and pepper. Continue stirring until cheese has melted.

  3. Transfer to a large serving bowl. Add the shrimp and drizzle with the cajun butter. Serve topped with grilled corn, chives, and fresh basil leaves.
