Irish Soda Bread Muffins. Since I’m half Irish you know we had to do something in the kitchen to celebrate St. paddy’s day. And what better way to celebrate than with some good old Irish baking in the form of these super fun and super cute muffins. Fluffy muffins filled with raisins and smothered with butter…does breakfast/dessert/snacking on this Irish holiday get much better than this…I think not. Since we have been doing all Irish all week, we obviously had to give you guys one last good Irish recipe in honor of st. paddy’s day. And there is nothing better than baking Irish soda bread to celebrate…except it does get a liiiittle better because these are in the form of muffins. So they’re even more fun than just plain old Irish soda bread.

They’re the perfect breakfast or snack or dessert. They’re filled with lots of raisins and they’re super buttery. Slather them with more butter for extra deliciousness.

Ingredients

  • 4 cups flour

  • 3 tablespoons sugar

  • 1 teaspoon salt

  • 1 tablespoon baking powder

  • 1 teaspoon baking soda

  • 6 tablespoons butter; diced

  • 1 1/2 cups raisins

  • 1 egg; beaten

  • 1 1/2 cups buttermilk

Directions

  1. Preheat the oven to 425 degrees. Grease a 12 slot muffin tin.

  2. In a large bowl, combine the flour, sugar, salt, baking powder, and baking soda. Work the butter into the dry ingredients using a fork. Add the raisins and stir to combine. In the center of the mixture, add the egg and buttermilk. Mix until combine.

  3. Using a cookie scoop, add two scoops of batter to each muffin slot. Bake for 15 - 20 minutes or until golden. Serve with butter.
