Creamy Tomato & Pea Pasta. Nothing like a springtime friday pasta to welcome this sunny & 75 weather. Think creamy tomato blush sauce with peas and topped with fresh basil and Parmesan. It’s simple but so delicious and so perfect for springtime !!

Nothing like pasta on a Friday. Even better…nothing like pasta on a springtime Friday. With a springtime pasta. When the weather is sunny and the temperatures are warm. And the best part about this sauce? It’s super easy…which makes it perfect for a Friday night when you’re looking for a simple dinner so you can enjoy your Friday night cocktail.

This tomato sauce is a blush like sauce filled with fire roasted chopped tomatoes and peas. It’s super saucy and creamy. Load that sauce up overtop of your favorite cup of pasta, top it with parmesan cheese, and garnish it with fresh basil leaves. All the colors and flavors of spring in one fun and vibrant bowl.

It is finally starting to feel like spring around here. The days are longer, the sun is shining brighter, and the temperatures are FINALLY getting warmer. This is a big turn around from the snowy Saturday we had to endure last week. So cheers to what feels like the official first weekend of spring !!


Ingredients

  • 1/4 cup olive oil

  • 1/2 sweet onion; chopped

  • 3 (14 ounce) cans fire roasted diced tomatoes

  • 1/2 cup fresh basil leaves; sliced

  • 1 cup heavy cream

  • salt, pepper, and red pepper flakes

  • 1 pound fresh peas

  • 1 pound pasta

  • grated parmesan for serving

Directions

  1. In a large skillet, heat the olive oil. Add the onion. Cook on medium heat for about 5 - 7 minutes or until tender. Add the tomatoes, basil, cream, salt, pepper, and red pepper flakes. Lower heat and cook for about 10 minutes.

  2. Cook the pasta. While the pasta is cooking add the peas to the sauce. Drain, saving 1 cup of cooking water. Add the pasta to the skillet with the sauce. Stir to combine, adding cooking water as needed.

  3. Serve topped with grated parmesan and additional basil.
