Baked Cod with Fresh Tomatoes & Basil

This white fish recipe is one that dates back to my great grandmother which she brought with her from Italy. We recently made this dish over Memorial Day Weekend at the beach, and we were instantly reminded of how good it is! Our Memorial Day Weekend tradition is to spend the weekend at the beach making tons of fresh fish recipes, drinking rum and orange juices on our deck, and hopefully getting a good tan (MDW weather is always so unpredictable in Jersey)!

This year’s MDW was very well spent with perfect weather and lots of good foods! We kicked off the weekend on Friday with a homemade pizza night. On Saturday we went to the beach to enjoy the beautiful weather then came home and made Crabs & Spaghetti and this delicious Cod! On Sunday we had brunch with some Bloody Mary’s then we drove our Jeep Wrangler to the drive-on beach which is one of the most unique spots on the Jersey shore! Again the weather was beautiful and we came home a made a pasta with pesto and burrata that was so delicious along with our classic Tomato Salad for appetizer! On Monday we barbecued with some friends back at home! It was such a simple yet perfect weekend to kick off the summer!

Anyway, back to the recipe, this one is super simple! Start by combining the tomatoes, olive oil, lemon juice, basil, brined peppercorns, and garlic in a bowl letting the ingredient marinate for about 1 hour. Then place the white fish of choice (we used cod) in a large glass baking dish then sprinkle with salt and pepper. Pour the sauce over top and let the fish marinate for 1 hour. Bake in the oven for about 10-15 minutes depending on the size of your fish.

a.     Ingredients:

  • 1 – 1 ½ pounds of white fish

  • ¼ cup of olive oil

  • ¼ cup of lemon juice

  • 10 oz of cherry tomatoes; halved

  • ½ cup of fresh basil

  • 1 tbsp of brined peppercorns

  • 1 garlic clove; minced


b.     Directions:

  1. In a medium sized bowl mix all ingredients except fish together; let the mixture sit for an hour to marinate until flavors blend together

  2. Place fish in a large glass baking dish and sprinkle with salt and pepper; pour the sauce over the fish and let the fish marinate in the sauce for about 1 hour, spooning the mixture over top of the fish several times

  3. Put the fish in a pre-heated 400 degree oven for approximately 10-15 minutes depending on the size of your fish

*Note: you may substitute sundried tomatoes for the fresh tomatoes and capers for the peppercorns depending on which you prefer
