Sole Meuniere

This fish recipe is very simple and very delicious. It is perfect for a week night meal after coming home from work or if you are looking for a quick yet delicious weekend dish!

With summer wrapping up quick, we are determined to make as many summery fish recipes as possible. This was another dish that did not disappoint. We made this dish with sole, but it is just as delicious with some nice flounder filets! We have been getting the freshest fish at our local grocery store, so our seafood dishes have been coming out amazing just like this one did!


Ingredients:

  • Three 8 oz pieces of sole or flounder filets

  • Salt and black pepper to taste

  • ½ cup of flour

  • 8 tbsp of butter

  • 1 lemon; sliced crosswise

  • ⅓ cup of finely chopped parsley


Directions:

  1. Sprinkle the filets with salt and pepper; dip them in the flour to coat

  2. Heat 4 tbsp of butter in a large skillet oven medium-high heat; add the floured filets; cook turning once until browned on both sides (this will take approximately 6 to 8 minutes)

  3. Transfer the filets to a baking dish or serving platter and sprinkle with parsley

  4. In the same skillet, add the remaining butter and cook until butter begins to brown; add the lemon slices and cook until heated through

  5. Pour the butter sauce over the filets and serve
