Shrimp Burgers
If you are looking for a fun, healthy, and simple week night dinner these shrimp burgers are perfect! They are absolutely delicious paired with the avocado aioli and served on a brioche bun.
We have been turning taco Tuesday into burger Tuesday and we do not regret it! End of the summer means getting in all the grilling and seafood recipes before the cold weather hits, so burgers are the perfect way to do so! This recipe is fun, summery, and too good to pass up!
Ingredients:
1 pound of large shrimp; peeled and deveined
1 egg
2 tbsp of parsley; chopped
2 tbsp of chives; chopped
½ cup of panko bread crumbs
½ cup of chopped red pepper
Salt and pepper to taste
4 brioche buns
Ingredients for Avocado Aioli:
1 avocado; halved and peeled
¼ cup of sour cream
1 tbsp of lemon juice
Salt and pepper to taste
Directions:
Divide the shrimp in half; coarsely chop half and set aside
Place the other half in a food processor and grind to a coarse puree; add the egg, breadcrumbs, parsley, and chives; add salt and pepper; transfer to a bowl and add the chopped shrimp and red pepper; form the mixture into burgers
Spray a large skillet with olive oil or canola oil; fry the burgers until brown on each side(approximately 4 minutes per side)
Place the avocado, sour cream, lemon juice, and salt/pepper in a food processor; process until smooth
Assemble burgers with aioli (may add cole slaw, bacon, or any other toppings desired)
