Sheet Pan Citrus Salmon

Sheet Pan Citrus Salmon! Loaded with Orangey Herb flavors and topped with Avocado Chimichurri served with Tricolor Roasted Potatoes and Tangy Arugula! The best part about this meal is it can all be done on a single sheet pan and who doesn’t love an easy week night meal like that?! Colorful and delicious with these amazing bold flavor ingredients!

First of all, who doesn’t love sheet pan dinners?! They are so easy and so simple. Cooking everything on one pan just makes life so much simpler. This sheet pan dinner happens to have a little bit of everything. The sweet citrus flavor on the salmon paired with the tangy arugula and avocado chimichurri is a burst of delicious flavors. Throw in a little spice with the smoked paprika and cayenne pepper because everything needs a little spice and there you have it! And we can’t forget the potatoes of course. Try dipping the potatoes in the chimichurri also SO good!


Ingredients:

  • 4 pieces of salmon 

  • 1/2 cup olive oil divided 

  • Zest of 1 orange

  • Zest of 1 lemon 

  • 1/2 teaspoon smoked paprika 

  • Salt and pepper 

  • 1/4 teaspoon cayenne pepper 

  • 2 tablespoons chopped fresh oregano 

  • 1 shallot sliced

  • 1 lb small potatoes cut in half 

  • 5 oz arugula 

 Directions:

  1. In a small bowl mix the orange and lemon zest, paprika, cayenne, salt and pepper. Add 1/4 cup olive oil and combine. Rub the mixture over the salmon pieces and set aside. Add the potatoes to a parchment lined baking sheet. Drizzle with 2 tablespoons olive oil and salt and pepper.

  2. Roast in 425 degree oven for 20 minutes. Remove from oven and push them to one side of the pan and add the salmon, orange slices from the zested orange and shallot. Roast about 10 mins till cooked through.

  • In a large bowl add the arugula, drizzle with remaining olive oil and and the juice from zested lemon, salt and pepper. Serve along side of salmon and potatoes.
