Salmon Puttanesca with Broccoli. Bringing out the festive colors tonight in the form of a Salmon Puttanesca. I mean seriously guys doesn’t this dish look like Christmas with all those reds and greens?!
But aside from how pretty this dish looks, it’s super delicious. It’s got Italian oil cured black olives, jammy tomatoes, and roasted broccoli. Plus it’s got an herby and spicy tang to it with the oregano, thyme, and red pepper flakes. Cooked in a lemony white wine sauce.

Aside from thanksgiving, Christmas Eve is another one of my absolute favorite days of the year. It definitely trumps Christmas Day for me. And me and my traditions are BIG on Christmas Eve as well.

Ingredients:
4 salmon filtets
olive oil
juice and zest from 1 lemon
1/2 teaspoon red pepper flakes
1/2 teaspoon paprika
salt and pepper
1 large head broccoli florets
10 ounces cherry tomatoes
1 garlic clove; minced
1 tablespoon fresh oregano
2 tablespoons fresh parsley
1 tablespoon thyme leaves
1/2 cup white wine
1/2 cup oil cured black olives
Directions:
Drizzle salmon filets with olive oil, lemon juice, red pepper, paprika, salt and pepper. Sear skin side down for 4 minutes in a large skillet. remove to a platter and set aside.
Add broccoli florets to skillet and cook about 10 minutes. Add tomatoes, garlic, oregano, lemon zest, and white wine. Cook until tomatoes start to burst. Add olives and cook a few more minutes. Add salmon back to the pan skin side up and continue cooking another 5 - 10 minutes until cooked through.
