Lemony Dill Salmon with Creamy Cucumber Salad

Lemony Dill Salmon with Creamy Cucumber Salad. Springtime salmon coated in a lemony herby dill marinate and topped with a refreshing creamy cucumber and avocado salad. But anyway back to this salmon. We went to the Italian market in Philly last Friday and we saw the MOST beautiful piece of salmon at the seafood store. Sometimes it is really hard to find a nice looking piece of salmon. The best salmon pictures are always with a long piece of very orange salmon.

We love when it is sockeye salmon season because all the pieces of salmon look just like this one. Sadly it is not sockeye salmon season and also sadly the season is very short. So when we came across this piece in Philly on Friday we were so so so excited about it.

We made a springtime recipe with lots of fresh dill and a creamy and refreshing cucumber salad. The salmon itself was really delicious, but this simple recipe made it ever better. A little lemony, a little herby paired with the creamy salad. SO good you guys. And the best part…it’s super simple and super easy to make !!

Ingredients

For the Salmon

  • 1 1/2 - 2 pounds salmon

  • 1 lemon; juiced and zested

  • 2 tablespoons olive oil

  • salt and pepper

  • 2 tablespoons fresh chopped dill

For the Creamy Cucumber Salad

  • 1 English cucumber; chopped 

  • 1 avocado; chopped 

  • 1/3 cup fresh chopped dill 

  • 2 tablespoons chopped chives 

  • 1/3 cup sour cream

  • salt and pepper 

Directions

  1. Drizzle the salmon with the lemon juice. Rub in the olive oil. Sprinkle with salt, pepper, lemon zest, and dill.

  2. Grill skin side down over medium-high heat for 5 minutes. Flip over and grill for an additional 5 - 8 minutes or until cooked through.

  3. Meanwhile make the cucumber salad. In a small bowl, mix the cucumber, avocado, dill, and chives. Fold in the sour cream. Season with salt and pepper. Serve overtop salmon.
