The past two years we have definitely gone all out for national barbecue day. Especially two years ago when it was on a Saturday. We had a giant grilled veggie platter and grilled clams and grilled oysters and grilled skewers. Just alllll the things you could possibly imagine. So since we typically do skewers and veggies on the grill for national bbq day, I wanted to keep the tradition going. But today its on a bit of a smaller scale than two years ago.
But we are still eating super good for national bbq day with these herby grilled halibut skewers. And of course we’re having some grilled veggies on the side too. Because grilled summer veggies are my absolute favorite. But these skewers are super unique and they’re actually pretty simple too.
The halibut is marinated in a lemony olive oil and rosemary mixture. Then they’re skewered with thick-cut applewood bacon and chunks of bread. All that’s left to do is grill them up until they are perfectly crispy and charred. Then serve them alongside a lemony Crema…because you know I am all about the sauce. And top them with some fresh basil for an extra pop of color and flavor.
This is our first skewer night of grilling season, and I am so excited about it. I love getting super creative with skewers in the summer. There are just so many sauces, marinates, veggie, seafood, chicken, and steak options to play around with. I can always come up with a new skewer, but I am definitely going to tell you guys you need to try this simple but delicious combo for the perfect light and refreshing seafood skewer. Ingredients
1/3 cup olive oil
3 tablespoons chopped fresh rosemary
salt and pepper
1 1/2 pounds halibut; cut into 2 inch chunks
2 cups crusty bread; cubed
1/2 pound bacon
juice of 2 lemons; divided
fresh basil for serving
1 cup sour cream
Directions
In a large bowl, combine the olive oil, rosemary, salt, and pepper. Add the halibut and bread cubes. Toss to coat. Let marinate for 10 minutes.
Assemble the skewers. Thread the skewers with the halibut, bread cubes, and bacon.
Heat the grill on medium-high heat. Grill for about 6 - 8 minutes on each side until the halibut is cooked through and the bread is charred.
Make the lemon Crema. In a small bowl, add the juice of 1 lemon, sour cream, salt, and pepper. Stir to combine.
Serve skewers drizzled with the juice of the remaining lemon and Crema. Garnish with basil leaves.
