Blackened Shrimp Po Boys with Avocado Ranch

Blackened Shrimp Po Boys with Avocado Ranch. It’s National Ranch Day so we had to pair our Po Boys with an Avocado Ranch sauce and a ranch slaw. These fun sandwiches are perfect for the warmer weather and packed with fun, spicy, zesty, refreshing flavors. Anyone excited for summer after seeing these?? Maybe I’m getting ahead of myself but these delicious Po Boys have this summer girl thinking all those warm July night vibes !!

I don’t know what it is about seafood on a fluffy brioche bun, but these kind of meals always put me in the mood for summer. Maybe it’s because we always eat lobster rolls or crab rolls or shrimp rolls or even a combination of all three shellfish rolls in the summertime. But either way I am all about the summer vibes.

After having spent last weekend at our new shore house for the first time, I am so ready to bring on Memorial Day forward. My brother and I always grew up spending summers at the Jersey shore, but at the end of last summer when we got a brand new house really made me super excited for what summer 2021 has to offer. I am SO ready for it especially since summer 2020 wasn’t my favorite by any means.

I can imagine eating one of these delicious Po Boys on the deck, grilling the shrimp outside, and sipping a summery cocktail. Maybe a rum and orange juice or a margarita. Those are pretty much my summer go-to cocktails.

These Po Boys are light, refreshing, and perfectly paired with the avocado ranch and ranch cole slaw. I guess we like ranch a little?? But smother that shrimp in the two and stuff them in a fluffy brioche bun…literal summertime heaven !!


Ingredients

For the Blackened Shrimp

  • 1 pound shrimp; peeled and deveined

  • 3 tablespoons olive oil

  • 3 tablespoons blackened seasoning

  • 6 brioche hot dog bun

For the Avocado Ranch

  • 1 avocado

  • 1 lime; juiced

  • 1/8 teaspoon onion powder

  • 1/8 teaspoon garlic powder

  • 1/2 cup buttermilk

  • 3 tablespoons fresh parsley leaves

  • 2 tablespoons fresh chives; chopped

  • 2 tablespoons fresh dill; chopped

  • salt and pepper to taste

For the Ranch Cole Slaw

  • 1 (14 ounce) bag cole slaw mix

  • 1/3 cup mayonnaise

  • 1 tablespoon ranch dressing mix

  • 1/4 cup buttermilk

  • 1/2 teaspoon celery seed

  • salt and pepper

Directions

  1. In a medium bowl, mix the shrimp, olive oil, and blackening seasoning. Let marinate for 20 - 30 minutes. Heat a large cast iron skillet with 1 tablespoon of olive oil. Add the shrimp and cook until browned on each side for a total of 5 - 7 minutes.

  2. Meanwhile make the avocado ranch. Place the avocado, lime juice, onion powder, garlic powder, buttermilk, parsley, chives, and dill in the bowl of a food processor. Process until smooth. Add salt and pepper to taste.

  3. To make the cole slaw, mix all ingredients together in a medium bowl.

  4. Assemble the Po Boys on the brioche buns adding the cole slaw and shrimp then topping with the avocado ranch.
