Bacon Jam Salmon with Cucumber Dill Salad. You know we love a good summer salmon especially when it’s Coho salmon. Marinated in a sweet bacon jam and topped with a refreshing cucumber, avocado, and dill salad. Garnished with fresh basil leaves. Perfect for summer and so delicious !! Cheers to the weekend !!

Another beautiful weekend is ahead of us, and today was a great start to it. I got up bright and early, went to the gym, and then did some cooking and baking when I got home. I am making a cauliflower queso tonight for appetizer, this delicious salmon for dinner, and for dessert pistachio pound cake. I am so excited to try all these delicious dishes and you will definitely be seeing them up on the blog at some point, so keep an eye out ;)))

It is a super gorgeous day out, but it’s a hot one. But it was super nice to get on the beach and relax for a few hours. Now I am going to continue my cooking and get this super fresh and super delicious salmon prepared for tonight. We are doing the salmon in a bacon jam that we recently picked up at our farmers market. Then we are topping it with a creamy cucumber, avocado, and dill salad. The bacon jam pairs super well with the creamy cucumber. Garnish it with some scallions and fresh basil, and you’ve got the most delicious summer salmon recipe that is also super simple to make.

I am really looking forward to the rest of this weekend as well. We have so many good recipes that we are trying this weekend. And I am also excited to go out to the bars. Only a few more weekends left so I have to make the most of it !! Cheers to summer Friday’s !!


Ingredients

  • 1/2 cup bacon jam

  • 2 pound salmon filet

  • 2 cucumbers; diced

  • 2 avocados; diced

  • 2 tablespoons fresh dill

  • 1 cup sour cream

  • salt and pepper

  • scallions and basil leaves for serving

Directions

  1. Rub the salmon with the bacon jam. Marinate for 30 minutes. Transfer to a 275 degree oven and bake for 20 minutes or until salmon is cooked through.

  2. To make Cucumber Dill Salad. In a medium bowl mix the cucumbers, avocado, dill, and sour cream. Season with salt and pepper. Toss to combine.

  3. Serve salmon topped with cucumber salad, scallions, and fresh basil leaves.
