Lobster Rolls. A classic beach dinner. And what better weekend for a classic beach dinner than Memorial Day weekend?! Chunky lobster in a lemony mayo, celery, and chive sauce. Fun, delicious, and perfect with a side of chips. Happy Memorial Day weekend guys !! How are you kicking it off ?!
Well Memorial Day Weekend is finally here. And to me that basically means the official start of summer. And the added bonus…it’s also my birthday weekend !! So apparently tonight is the only nice weather all weekend. I am hoping that changes, but I am not so sure it will. But we’re going to make the most of it anyway.
So we are kicking off the weekend with my requested Lobster Rolls. They are one of my favorite summertime eats. Something about a good refreshing lobster roll just screams summer to me. And we haven’t made them in so long. So we thought we would kick off the summer with them and do MDW right !!
I am super content, enjoying a cocktail right now on the deck. It is finally really warm here. So I am going to get back to my beachy rum and orange juice, enjoy this beautiful night, AND open some birthday gifts. I am so grateful to be spending this weekend at the beach with my family and friends. I definitely am feeling super lucky this year :) !!
Ingredients
three 1 ½ pound whole lobsters; steamed
¼ cup mayonnaise
juice of 1 lemon
salt and freshly ground pepper
2 stalks celery; finely chopped
fresh chives; chopped
lettuce leaves for serving
4 brioche hot dog buns
¼ cup clarified butter
Directions
In a small bowl mix the mayonnaise, juice of half a lemon, salt, and pepper. Set aside
Remove the meat from the lobsters and cut into chunks. Mix the lobster chunks, celery, and chives with the mayonnaise mixture and toss gently. Taste seasoning and add remaining 1/2 of lemon, salt, and pepper if needed.
Assemble the rolls. Place a lettuce leaf onto each bun and mound with the lobster salad. Top with additional chives and drizzle with the clarified butter to serve.
