Buttery Lobster Rolls. Chunky lobster meat smothered in clarified butter in a buttery toasted brioche bun. Topped with chives and drizzled with charred lemon. And served alongside crispy fries. The ultimate beach weekend dinner. Cheers to Father’s Day weekend !!

Happy Friday everyone !! We made it to the weekend…and it is a special weekend because it’s father’s day on Sunday. But today is super exciting because the weather is beautiful and we are having these delicious lobster rolls to kick off the weekend.

Today was pretty much my idea of a picture perfect day. I woke this morning and went for a walk with my mom and we had our coffees. The sun was shining and there literally was not a cloud in the sky. It was an absolutely gorgeous morning. Then I went to the gym for a nice little workout before hitting the beach. The beach was a little windy, but the sun was shining so I did not mind at all. We came home and are now having these delicious and fun lobster rolls with some margaritas. I had the most relaxing day and I am just in heaven.

These lobster rolls are such a fun way to celebrate the weekend. They are a little fancy because it’s lobster, but super casual because they’re simple sandwiches. All buttery and delicious on a toasted brioche bun, topped with chives, and drizzled with a little but of charred lemon juice. Simple, yet super fun and so so good !!

Ingredients

  • three 1 1/2 pound whole lobsters; steamed

  • 1/2 cup clarified butter

  • fresh chives; chopped

  • juice of 1 lemon

  • 4 brioche hot dog buns; toasted

Directions

  1. Remove the meat from the lobsters and cut into big chunks.

  2. Assemble the rolls. Mound with the lobster meat. Top with chives. Drizzle with clarified butter and lemon juice to serve.
