Buffalo Cauliflower Grilled Pizza

Buffalo Cauliflower Grilled Pizza. Crispy Buffalo cauliflower, crumbled AND creamy blue cheese, cheesy mozzarella, scallions. All layer on a crispy grilled pizza crust. And the best part?! It’s National Pizza Party Day !! Cheers to good homemade pizza on Friday and the weekend and of course it being a day to celebrate pizza !!

It’s Friday and it’s Pizza Friday AND it’s National Pizza Party Day. So I don’t think there has ever been a more perfect day for a pizza night. The weather is absolutely beautiful today. I got to relax a bit and tan outside. But now it’s time to cook some pizza on the grill.

I love a good buffalo pizza. But being the total veggie lover that I am, I prefer buffalo cauliflower over buffalo chicken. Don’t get me wrong…I still love a good buffalo chicken pizza too but cauliflower, to me, is just more exciting. Enter, this delicious, crispy, cheesy, Buffalo Cauliflower Grilled Pizza.

It’s a super cheesy one with mozzarella and blue cheese crumbles AND even some creamy blue cheese sauce on the top. Then you’ve got all that crispy, spicy roasted cauliflower tossed in hot sauce…if you’re into spicy like me go heavy on the hot sauce. Finally top it with some slice scallions and you’re ready to go. It’s honestly pretty simple but it’s so so good you guys.

Tonight were pairing pizza night with some margs. Typical, I know. But what’s pizza night without a good cocktail, you know?!


Ingredients

  • 1 pizza dough; homemade or store-bought

  • 1 head cauliflower florets

  • 5 tablespoons olive oil; divided

  • salt and pepper

  • 3 tablespoons hot sauce

  • 4 ounces shredded mozzarella

  • 2 tablespoons crumbled blue cheese

  • blue cheese sauce for topping

  • sliced scallions for topping

Directions

  1. Preheat the oven to 425 degrees. On a baking sheet, toss the cauliflower with 3 tablespoons of olive oil, salt and pepper. Transfer to the oven and cook for about 20 - 25 minutes. Remove from oven and transfer cauliflower to a medium bowl. Toss with the hot sauce and set aside.

  2. Drizzle the remaining 2 tablespoons of olive oil over the pizza dough. Spread the oiled dough out on a grill pan using your fingertips. Using a fork, pierce holes throughout.

  3. Heat the grill to medium heat and place the pizza pan on the grill. Cook approximately 3 - 4 minutes until crust is browned. Flip over and remove from grill. Layer with the mozzarella, buffalo cauliflower, and crumbled blue cheese. Place back on the grill for another 3 - 5 minutes until cheese has melted. Serve topped with blue cheese sauce and scallions.
