Scallion Lo Mein

This oriental dish is a recipe that has been in the family for quite a long time, back to before I was born! My mom starting making this dish when she first married my dad, and she said it was always an easy and delicious dinner to make for the two of them.

We have continued to make this recipe today because everyone loves it. We like to pair it with a salmon recipe that we recently shared, our Sweet & Spicy Salmon! The salmon recipe also has an Asian flare, so the two dishes pair perfectly together!


a.     Ingredients:

  • 1 pound of thin spaghetti or fresh Chinese egg noodles

  • 4 tbsp of soy sauce

  • 2 tsp of sesame oil

  • 2 tbsp of vegetable oil

  • 1 tbsp of fresh ginger; minced

  • 1 garlic clove; minced

  • 1 bunch of scallions; cut into 1 inch pieces


b.     Directions:

  • Cook the pasta or noodles in boiling salt water until tender but still firm; drain and rinse under cold water

  • Transfer pasta to a bowl, add the soy sauce and sesame oil then toss; let marinate for approximately 2 hours, stirring occasionally

  • Heat the vegetable oil in a heavy, large skillet over medium heat; add the ginger and garlic, when that sizzles, add the scallions; fry for 2 minutes

  • Add the noodles, stirring to heat through for about 2 minutes then serve
