Orecchiette with Bacon, Black Peas, & Spinach. Happy new year guys!! Who else is all about traditions on New Years?! Our tradition is having this pasta dish for good luck on New Year’s Day. We think everyone could use some good luck this year, so enter this black eyed pea pasta dish! Happy new year everyone & cheers to 2021!!

Well guys, 2021 is finally here. Some of us have been ready for the new year for while. I know I have! 2020 was still a good year for us despite all the craziness. But we are totally ready for a fresh start and all the exciting things to come this year.

Every year on New Years day, we make this black eyed pea pasta for good luck. Superstitious, I know. Whether you actually believe in good luck traditions on New Years or not, this pasta is still super fun and super delicious. Plus, it’s always fun to have traditions around the holidays.

We literally only make this pasta once a year. I don’t know why, because it is literally SO good. But every New Years day is dedicated to making this good luck orecchiette! So once a year, we enjoy this colorful and fun dish.

Happy New Years guys! Any fun plans for today?! New Years day is on a Friday this year, so time to have some fun! We’re having family over for fun appetizers like chips, dips veggies, deviled eggs, etc. Then we’re having this pasta for dinner! Cheers to 2021!!


Ingredients

  • 1/2 pound bacon; thinly sliced

  • 1/3 cup olive oil

  • 1 garlic clove; thinly sliced

  • 1/2 teaspoon red pepper flakes

  • 1 pound cherry tomatoes; halved

  • 2 cups frozen black eyed peas; drained & thawed

  • 2 tablespoons balsamic vinegar

  • salt and pepper

  • 1 1/2 pounds orecchiette pasta

  • 5 ounces baby spinach leaves

Directions

  1. In a medium skillet, cook the bacon. Stir until browned and crisp. Using a slotted spoon, transfer the bacon to paper towels to drain. Add the garlic and red pepper, cook for 2 minutes or until fragrant. Scrap the garlic oil into a serving bowl. Add the tomatoes, black eyed peas, balsamic vinegar, salt, and pepper. Toss well.

  2. Meanwhile cook the pasta. Drain well. Add the pasta, spinach, and bacon to the tomato mixture. Stir until spinach is wilted. Season with salt and pepper to serve.
