Creamy Bacon & Mushroom Fettuccine with Burrata. So lots of people might be going for those healthy New Years resolution dishes but we’re all about some New Years homemade fettuccine instead. Especially when it’s in a creamy creme fraiche based sauce and loaded with crispy bacon and buttery herby mushrooms. Oh and don’t forget that creamy Burrata on top it’s kind of a deal breaker. And anyway it’s still the weekend so New Years resolutions can wait until tomorrow am I right?! ;)

With the holidays now behind us, tomorrow is looking a little dull for many of us. The return to work paired with the lost hype of the holidays isn't necessarily anyone’s favorite feeling. However, there is also SO much on the horizon this year. So many new recipes coming, we already have so many ideas. And of course we have already started planning for the next big events/holidays. Valentine’s day is a super fun one for us, so you best believe menu planning is already underway.

Today, was definitely a day to regroup and get ready to transition from the holiday vacation back to everyday life tomorrow. I definitely am having a little case of the Sunday scaries today since vacation is official over. Setting that alarm for tomorrow was not my favorite thing that I did today. But with the first week of January upon us, today was also a day to plan this week’s menu. The “fresh start” week of the year so to speak is going to be filled with some new favorites!

For now, were sharing this pasta with you guys. Because honestly today was meant for comfort food, and Sundays are meant for pasta. One of the silver linings for us in 2020 was making homemade pasta. It was something we really never had done before. When we found out how easy it actually was, it became a Sunday ritual.

So, to kick off the first Sunday of 2021, homemade pasta it is for tonight! And what makes it even better is this sauce! It is definitely rich, a bit decadent too. The bacon and mushrooms are totally a winning combo, and that burrata, oh just so so good. Ok, so it’s a bit over the top. But healthy eating can wait until tomorrow, am I right?!

Ingredients

  • 3 tablespoons butter

  • 14 ounces mixed wild mushrooms

  • 1 tablespoon rosemary; chopped

  • 1 tablespoon fresh thyme leaves

  • salt and pepper

  • 1/2 pound bacon; chopped

  • 1 shallot; chopped

  • 2/3 cup white wine

  • 7 ounces creme fraiche

  • 1 cup chicken stock

  • 1/8 teaspoon white pepper

  • 1/4 teaspoon ground sage

  • 1 pound fresh or store-bought fettuccine

  • 8 ounces burrata; torn into pieces

Directions

  1. In a large skillet, heat the butter until melted. Add the mushrooms, rosemary, and thyme. Sprinkle with salt and pepper. Cook undisturbed for 5 - 7 minutes until caramelized. With a slotted spoon, remove the mushrooms and set aside.

  2. Add the bacon and shallot to the skillet. Cook until bacon starts to brown, about 7 - 10 minutes. Pour in the wine and let it reduce for about 3 minutes. Add the mushrooms and the creme fresh and stir until combined. Mixture should be very creamy. Add the chicken stock a little at a time to thin it out to your liking. Season with salt, pepper, white pepper, and ground sage.

  3. Meanwhile, cook the pasta. Drain well. Add the pasta to the skillet with the sauce. Stir until combined. Serve topped with fresh burrata.
