Spaghetti with Fried Zucchini
I am a big fan of zucchini, so any recipe that incorporates zucchini is definitely a favorite of mine! This pasta dish is so good and perfect for a summer night. The fried zucchini mixed with the parmesan cheese and basil is incredible!
This pasta dish just seems to melt in your mouth, and if you love zucchini as much as I do, you will certainly want to give this recipe a try. We also love the touch that the basil gives this dish. Every summer we grow fresh basil plants in our yard, so we are always looking for recipes that tie basil into the mix of ingredients!
a. Ingredients:
1 pound of spaghetti
3 medium zucchinis; cut in thin rounds
All-purpose flour (enough to coat zucchini rounds)
1/3 cup of extra virgin olive oil + more for frying
1 cup of grated parmesan cheese
Fresh ground black pepper
Red pepper flakes
Large handful of fresh basil leaves
b. Directions:
Toss the zucchini with salt and flour; heat the olive oil in a large non-stick skillet over medium-high heat; lay the zucchini rounds in a single layer as many as will fit; cook until browned flip over and cook again; do this until all zucchini has been browned using more olive oil if needed
Cook the pasta according to directions; drain and reserve 1 cup of pasta water
Place the pasta back into the pot over low heat and drizzle it with olive oil until coated; whisk in the pasta water and the cheese until there is a creamy consistency; add the zucchini and the basil and toss
Taste and adjust seasonings adding salt, pepper, and red pepper flakes
