Creamy Cauliflower Pasta

Creamy Cauliflower Pasta. Sunday comfort food at its finest…a super creamy bowl of goodness. The creaminess is a cauliflower purée that is so easy and so delicious. Topped with extra cauliflower, fresh basil, and fresh cracked black pepper. A simple dish for a super beautiful spring Sunday night…and don’t forget a nice glass of white wine ;)))

The weather is so beautiful today, so you already know I had to make it another tanning day. And to go with the perfect weather were having the perfect springtime Sunday pasta. Think Alfredo but with cauliflower instead. It’s a creamy, cheesy puree that’s kind of like an Alfredo sauce, but in my opinion it’s better. You guys know I love my veggies ;))

Top it with extra chunks of cauliflower, fresh basil leaves, and lots of fresh cracked black pepper. It’s a simple combo that is so good and perfect for a lighter version of Alfredo sauce. And lighter is always better for the summer better weather months.

I am super sad to see this weekend coming to an end. I feel like they are all just flying by. And they have all been so much fun lately which makes the Sunday scaries that much worse. But at least the weather is making it a liiiiittle less scary…and so is this pasta !!


Ingredients

  • 1 large head cauliflower; cut into florets

  • 4 cups vegetable broth

  • 2 cups water

  • 4 tablespoons butter

  • salt and white pepper

  • 1/2 cup milk

  • 1/2 cup heavy cream

  • 1/3 cup parmesan

  • 1 pound pasta

Directions

  1. In a large pot, bring the vegetable broth and water to a boil. Add the cauliflower and cook covered for 10 minutes or until cauliflower is tender.

  2. Transfer the cauliflower, 1/2 cup of cooking liquid, butter, milk, and heavy cream to the bowl of a food processor. Process until smooth. If the mixture is too thick, add more cooking liquid. Season with salt and white pepper. Stir in the parmesan cheese. Transfer to a bowl and set aside.

  3. Cook the pasta. Drain and add the cauliflower sauce to the pot with the pasta. Stir to combine, adding cooking liquid as needed. Serve topped with fresh basil and fresh cracked black pepper.
