Creamy Avocado Pasta with Zucchini & Bacon

Creamy Avocado Pasta with Zucchini & Bacon. A warm, creamy, and delicious avocado basil sauce coats this perfect springtime pasta dish. And it’s filled with zucchini ribbons and thick-cut crispy bacon. Topped with fresh basil and lots of cracked black pepper for the perfect better weather combo. And it’s like melt in your mouth delicious…so it’s hard not to love it !!

Ok guys, tonight we are bringing back an all time favorite. I seriously love this pasta and we pretty much make it every spring or summer when the weather gets warm. You can get pretty creative with what you add to this sauce but somehow we always end up back with this combo of zucchini and bacon.

The sauce is super simple it’s just pureeing avocados and adding some flavor with basil, lemon juice, cheese, olive oil, salt, and pepper. Then you can pretty much add whatever you want to the mix. Serve it up plain or go with our favorite…zucchini ribbons and bacon. The zucchini ribbons cook in the sauce and the bacon is the perfect addition….all thick-cut and crispy. And finally it’s a little zesty from some lemon juice and a little cheesy with a touch of parmesan…seriously just an incredible combo of flavors.

This week has been a rough one at work. A lot of anxiety to say the least. So this pasta is definitely cheering me up tonight since it’s one of my favorites. And now that my week is almost over I am definitely looking forward to the weekend. We have a lot of fun things planned and I am so ready to get it started.

Ingredients

  • 1/2 pound thick cut bacon; chopped

  • 2 large ripe avocados; chopped 

  • 1/2 cup chopped fresh basil 

  • 2 lemons; juiced

  • 1/3 cup parmesan cheese 

  • salt and pepper to taste 

  • red pepper flakes 

  • 2 medium zucchini’s; thinly sliced into ribbons 

  • 1 pound pasta

Directions

  1. In a large skillet, fry the bacon and set aside.

  2. In the bowl of a food processor add the avocados, basil, lemon juice, Parmesan, salt, and pepper. Process untill combined and smooth. Transfer to a medium bowl and set aside.

  3. Cook the pasta. Drain, saving 1 cup of cooking water. Return the bacon skillet to the stove over low heat and add the pasta, zucchini and avocado mixture. Continue adding the cooking water until you have a creamy consistency. Taste and adjust seasonings adding salt, pepper, and red pepper flakes. Serve topped with additional fresh basil leaves.
