Boursin Cheese & Broccoli Pasta. Creamy, cheesy broccoli loaded pasta. The Boursin cheese is filled with chives and blends with the warm pasta to become creamy and herby. And filled with lots of broccoli, topped with fresh basil, and just tastes so good it’s addicting !!
So festivities for 4th of July weekend start now !! I am only working a half day today and then we are going to our beach bar for some frozen afternoon cocktails before heading out to dinner. So this pasta is an oldie but it’s a goodie. And we couldn’t wait any longer to share this one with you guys.
The pasta is coated with a creamy Boursin cheese mixture. We used the chives seasoned Boursin and it was so perfect with the broccoli. The broccoli gets cooked down so that it mashes up a bit. Yet there are still big chunks so you get the best of both in the creamy sauce. Finally it’s topped with some fresh basil and served with some fresh cracked black pepper.
If you haven’t tried using Boursin cheese as the base of a pasta sauce before then trust me you need to. It gets super creamy and mixed with some pasta water it becomes the perfect thick, decadent sauce. We want to try using the black pepper Boursin as the sauce base next…all the flavors sound too delicious !!
Well now I am going to go enjoy some cocktails and dinner at one of our favorites down the shore….Amada. It’s a Spanish tapas restaurant and I seriously just have such a good experience every time I go. The food is delicious, the cocktails are fun, and the views of the ocean and the beach are perfect. Ingredients
1/4 cup butter
1 garlic clove; minced
red pepper flakes
1 large head broccoli; shaved
1/2 - 1 cup vegetable stock
2 (5.2 ounce) packages basil & chive Boursin cheese
1/2 cup heavy cream
salt and pepper
1 lemon; juiced
1 pound pasta
fresh basil for serving
Directions
In a large skillet, melt the butter. Add the garlic and red pepper flakes. When the garlic sizzles, add the broccoli. Cook and toss over medium heat for about 10 - 12 minutes or until broccoli is cooked but still firm, adding vegetable stock as needed. Season with salt and pepper.
Add the Boursin cheese and remaining vegetable stock. Stir until the cheese melts into the vegetable stock. Add the heavy cream. Season again with salt and pepper. Set aside.
Cook the pasta. Transfer the pasta from the pot to the skillet with the Boursin cheese. Finish cooking the pasta over low heat in the sauce. Add the lemon juice and add pasta water as needed. Serve topped with red pepper flakes and fresh basil.
