Tiramisu Cake. Chocolately, gooey tiramisu cake. My dad absolutely loves tiramisu, so we decided to make this tiramisu cake !! It’s seriously delicious loaded with chunks of chocolate, soaked in a coffee-rum mixture, topped with a vanilla cream cheese frosting, cocoa powdered, and extra chocolate of course !! Happy weekend guys !!

Snow days are always grounds for baking. When it’s cold and snowy baking just brings a cozy vibe. The hard part is picking what to bake. This weekend I went with another cake. And since Tiramisu is a favorite of my dads, I went with this amazingly delicious, gooey, chocolatey Tiramisu Cake.

We have been wanting to make Tiramisu for a little while now, so this cake was the perfect way to give traditional tiramisu a twist. It still has all the traditional ingredients, but since its more of a cake it’s a little different which is always fun.

It’s got the chocolate chunks, the rum, the dark roast coffee, the vanilla whipped cream, and the best part…extra chocolate on top !! If you guys are in need of a good snow day cake, do not hesitate to try this one because it totally did not disappoint anyone in our house !!


Ingredients

For the Cake

  • 8 tablespoons butter

  • 1/2 cup sugar

  • 1/2 cup sour cream

  • 1 teaspoon + 1/2 teaspoon vanilla extract

  • 3 eggs

  • 1 1/2 cups flour

  • 1 1/2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1/4 cup semi-sweet chocolate chips

  • 1/3 cup brewed coffee

  • 1 tablespoon dark rum

  • 1 tablespoon honey

  • cocoa powder and chocolate shavings for serving

For the Frosting

  • 4 ounces cream cheese

  • 3/4 cup heavy whipping cream

  • 1 tablespoon honey

  • 1 teaspoon vanilla

Directions

  1. Preheat the oven to 350 degrees. Grease a 9 inch round cake pan with cooking spray.

  2. In a large bowl, beat the butter and sugar until combined. Add the sour cream and 1 teaspoon vanilla, beat until smooth. Beat in the eggs, one at a time. Add the flour, baking powder, and salt. Beat until combined. Fold in the chocolate chips. Pour batter into prepared baking dish and transfer to the oven for 30 minutes or until cake is set. Let cool for 10 minutes. Transfer to a plate.

  3. In a saucepan, add the coffee, rum, 1/2 teaspoon vanilla, and honey. Bring to a boil over high heat. Remove from heat and let cool slightly. Brush the cake with the mixture, and let it absorb for 30 minutes.

  4. Using an electric hand mixer, whip the cream cheese until smooth. Add the heavy cream and beat until soft peaks form. Add the vanilla and honey, beating to combine. Spread the frosting on the cake. Dust with cocoa powder and chocolate shavings to serve.
