Banana Coconut Cake. Chocolatey, gooey, fluffy banana cake. Is there any better Valentine’s Day dessert?! Chocolate is kind of must on Valentine’s Day and this banana cake is the way to go. Anyone else celebrating Valentine’s Day yet?! Cheers !!

Overindulging with desserts on Valentine’s Day is kind of what the holiday is about. Whether it’s chocolates, cake, doughnuts, you name it, dessert on Valentine’s Day is a must. This year we went for a cake.

We had so many overly ripe bananas this week, so you know what that means. Banana cake it was! But the frosting had to be chocolate because you always need some kind of chocolate on Valentine’s Day.

Every year, our family does a cute little Valentine’s Day dinner. We make fun and festive foods and drinks. Exchanges gifts. Make the holiday feel more special, you know?! I think that is why I have always loved Valentine’s Day so so much because my family always made it feel special.

This year we're doing our celebration dinner the day before Valentine’s Day since it’s on a Sunday and Saturday is always more fun than Sunday! We did a raw bar for appetizers, had Pomegrante Martinis (yes we are still obsessed with those), exchanged gifts, had surf and turf for dinner, and finally ended the night with this DELICIOUS banana cake.

It’s honestly hard not to love a good banana cake or banana bread. This one takes it to another level though. It’s gooey, a little nutty from the coconut, extra chocolatey with the frosting, and just all around super tasty and definitely addicting !!

Ingredients

For the Cake

  • 4 medium overly ripe bananas; mashed

  • 1/2 cup vegetable oil

  • 1/4 cup honey

  • 2 eggs

  • 2 teaspoons vanilla extract

  • 1 1/2 cups flour

  • 1 1/2 teaspoon baking soda

  • 1 teaspoon cinnamon

  • 1/2 teaspoon salt

  • 1/2 cup shredded unsweetened coconut flakes

For the Frosting

  • 2 ounces cream cheese; room temperature

  • 1 stick butter; room temperature

  • 1 cup powdered sugar

  • 1/2 cup cocoa powder

  • 2 teaspoons vanilla extract

  • 1/4 cup milk

Directions

  1. Preheat the oven to 350 degrees. Grease an 8 inch square baking pan with cooking spray.

  2. In a large bowl, combine the mashed bananas, oil, honey, eggs, and vanilla. Add the flour, baking soda, cinnamon, and salt, mixing to combine. Fold in the coconut flakes. Transfer batter to prepared pan and bake for about 35 minutes or until the cake is set. Remove and let the cake cool before frosting.

  3. Meanwhile, make the chocolate frosting. In a large bowl, add the cream cheese and butter. Beat with an electric hand mixer until fluffy. Add the powdered sugar, cocoa powder, and vanilla. Continue to beat until the frosting is fluffy. Beat in the milk until combined.

  4. Spread frosting on cooled cake and serve.
