Lemon Pie
I am all about lemon flavored desserts, and in the summer they are just so perfect and refreshing! This Lemon Pie recipe is so simple. You will want to be making it all the time because it is just that easy and delicious.
This recipe is simply a blended mixture of eggs, butter, sugar, and Meyer Lemon juice. We garnish our lemon pie with fresh blueberries and blackberries to make it look pretty and taste even better. Lemon Blueberry desserts always have such a perfect taste!
We recently visited the Italian Market in Philly where we stopped at our favorite bakery, Isgro’s. They have the most delicious biscotti, and in the summer they make an amazing lemon blueberry flavored one! We thought the biscotti paired great with this Lemon Pie! It was the perfect summer Sunday dessert at the beach!
a. Ingredients:
1 pie crust
1 ¼ cups of sugar
3 eggs
3 ¾ cups of meyer lemon juice
¼ cup of unsalted butter; melted
½ cup of fresh blueberries and blackberries for garnishing
b. Directions:
Pre-heat the oven to 350 degrees
Using a blender, mix together the eggs, sugar, and lemon juice for about 2 minutes or until it is smooth
Melt the butter and add it to the blender then blend for an additional 30 seconds
Place the pie crust in a pie dish then add the lemon mixture
Bake the pie for approximately 30 – 35 minutes or until the filling is set; let the pie completely cool before serving
