Bourbon Pecan Pie
So basically, is it even thanksgiving without a pie?! I really don’t think so! A good pie is necessary to end the meal, no matter how full you are, there has to be room for at least one tiny bite of pie. On thanksgiving you need the classics, this would include a good pecan pie. And since it’s the holidays why not throw in a little bourbon.
Enter, our gooey, chocolatey Bourbon Pecan Pie. This pie is not only delicious, but a good pecan pie recipe is always simple and easy. Which is why it is also perfect for thanksgiving because it doesn’t add a ton of extra cooking to your day.
I have always loved pecan pie, so for me it definitely trumps the pumpkin on thanksgiving. Don’t get me wrong I love a good pumpkin pie in the fall, but something about a gooey pecan pie always get me. I will always be sure to save a little room for this pie. Oh, and don’t forget to serve it with some vanilla ice cream. Its a simple combo, but there is just something so comforting about a nice slice of pecan pie and vanilla ice cream!
Ingredients:
1 pie crust (homemade or store bought)
4 tablespoons butter; room temperature
1/2 cup sugar
3/4 cup dark corn syrup
2 tablespoons bourbon
1 teaspoon vanilla extract
1/4 teaspoon salt
1/2 cup semi-sweet chocolate chips
1 cup raw pecans
Directions:
Pre-heat the oven to 375 degrees.
In a large bowl, cream the butter and sugar. Add the eggs, corn syrup, bourbon, vanilla, and salt. Use mixer to combine. Stir in the chocolate chips and pecans.
Press the pie crust into a 9 inch pie dish. Pour the pecan mixture over the pie crust, and transfer to the oven. Bake for about 55-60 minutes. Remove from oven, and let the pie cool. Serve warm or at room temperature.
