Classic Christmas Fruitcake
Classic Christmas Fruitcake. It doesn’t get much more festive than baking fruit cakes and decorating the Christmas tree on a Saturday before Christmas. You can go wrong with a classic fruitcake recipe. This one is simple and super delicious! It’s a recipe you need to have around over the holidays. After all just take it from jimmy buffett, there’s a little bit of fruitcake left in everyone of us!
I seriously can’t think of a better way to spend a pre-Christmas Saturday than baking fruitcakes and decorating the Christmas tree! That is a perfectly relaxing and festive day to welcome the holiday season! I had so much fun baking these. They were super simple, but totally different than anything I’ve ever made before.
This recipe is classic. It has all the traditional ingredients when it comes to fruitcakes. Hence why we called it Classic Christmas Fruitcake! We shared them with family, and everyone absolutely loved them! So, here’s to our new Christmas baking tradition!
Ingredients:
1 pound pecans; chopped
1 pound dates; pitted and chopped
1/2 pound candied cherries (red and green)
1/2 pound candied pineapple
3/4 cup sugar
3/4 cup flour
1/2 teaspoon baking powder
3 eggs
1 teaspoon dark rum
Directions:
Pre-heat the oven to 250 degrees. Spray two loaf pans with cooking spray and line them with wax paper. Spray the wax paper with cooking spray.
Chop the pecans and the dates. In a large bowl, combine candied fruits, pecans, and dates. Mix the dry ingredients in with the fruit.
Beat eggs with the rum. Combine with the candied fruit.
Spoon into the prepared loaf pans. Press down gently to remove air bubbles. Bake for 1 hour and 45 minutes. Let cakes cool before removing them from the pans.
