Blood Orange Salad
Blood Orange Salad. If you’re Italian, this side dish might resonate with you on Christmas Eve. If you’re not Italian you’re probably really confused by this one. It’s one of those dishes that tastes really good, but sounds really strange, and just can’t be explained.
First of all, it’s a really simple salad. Basic ingredients like salt, pepper, orange juice, and olive oil. So, all you need to do is coat the oranges and olives in these ingredients and serve. I mean it doesn’t get much easier than that. Sounds odd. I know. But trust me, just try it!
Second, this side dish is a staple part of the seven fishes feast. We make it every year. You can use whatever oranges you like. This year we’re using blood oranges. They can sometimes be hard to find, so if you haven’t seen them yet this season, any old orange works fine as well! Then for the olives, use Kalamata olives.
This is seriously one of the most interesting, but delicious side dishes you’ll ever taste. It’s totally essential for the feast of the seven fishes!
Ingredients:
6 blood oranges; peeled and sliced 1/4 inch thick, seeds removed
1/4 cup orange juice
salt and pepper
1 cup kalamata olives; pitted
1/4 cup extra virgin olive oil
Directions:
Fan orange slices on a large platter. Sprinkle with salt and pepper. Drizzle with orange juice. Spread olives over the oranges. Drizzle with olive oil.
